Baseball Life has us always going somewhere! Every few days we go to a different town to play baseball⚾️!

I go on most of the trips with Storm. 😄👏🏻❤️. One of the things I am always trying to do is keep our diet plant based , healthy and fresh. That is a creative quest for me!
My favorite show on The Food Network is CHOPPED! It has really good chefs that have to create a 3 course meal from ingredients that are not usually compatible or known by the average person! It's awesome!!The judges are the Creme de la Creme of Chefs! The women judges can cook circles around the men! One of the men has the ability to roll his "R's" on any Mexican dish, and keeps his make up artist busy covering his great tattoos! Another judge was a Head Chef at 24 and now drives fancy cars, and another judge always looks like he is ready to crack a joke! They are all amazing. However, the Iron Chef, Geoffrey Zakarian, is my TV mentor! He is calm, cool, collected, loves his pantry, and has a snazzy collection of eyeglasses! Sometimes when I get in my kitchen I imagine myself on CHOPPED! I like to play with recipes..adjusting things for our tastes and food preferences...Oh the things you do to entertain yourself!!

​This season Storm and I made a effort to eat more healthy. One of the ways we tried to help ourselves was to travel on road trips with easy and ready to eat foods. I'd like to share some of the favorites that worked for us! I think even The Iron Chef will like these!!

There are years we have stayed in the team hotel for our home base. That has eliminated a kitchen for me - it's a challenge for this foodie! Other years we're in an apartment. You just never know, but these work for either!

One of my Go To Travel Foods are our wraps! I love the Flatout Wraps! They are available in different flavors and are very sturdy, low gluten, contain protein and delicious!!
​Mission makes gluten free wraps and they are yummy also!

The variety available for filling wraps is endless!!
•Tofurkey and Tempeh
•Gardein chicken
•Chick Pea salad
•Quinoa tabouli
•Greens of all kinds, bell peppers, tomatoes, black beans, salsa, etc
•Vegan Cheeses (Daiya, Chao, Go Veggie, etc.)
•Apple slices or Banana & Natural peanut butter

They are also very easy to tote in Ziploc/ Glad bags! They lay flat in a cooler and are easy to grab for a snack/meal!
I also grabbed some pineapple and blueberries for cool juicy bites on these summer days.
And of course our favorite Nutty Chocolate Protein Balls made the trip!!

Best Fluffy Vegan Pancakes!

Use yummy maple syrup! You can add fruit, nuts or chocolate chips to the batter. Let the batter rest 10 minutes before making pancakes. Flax Egg= 3T water + 1T ground flax. Mix and let sit until texture of a beaten egg.
