Apple Pie.. Any Time!

I love Apple Pie! My family loves it too! Most of the time it is associated with Autumn. I am inclined to change that perception and say it's for ALL seasons! My family and I grab any chance we can to "Celebrate Apple Pie Season"! 🍎

Apple Pie it is!! That first one of the off season is so yummy!! I've played with this recipe for over 10 years, and it has become a family & friend favorite.
I like to use at least 2-3 different kinds of apples in my Apple Pie. Granny Smith is always good because of it's tartness. Any of your favorite varieties will be fine! I also began adding oatmeal to it when the kids were younger for a healthy option. I've found that it absorbs the wonderful apple liquids and has a good texture!! The Craisins or Golden Raisins also plump up and have a fun burst of warm sweetness that is so yummy!
My latest experiment, turned permanent, is the addition of the chips. The Butterscotch chips actually give a caramel flavor; while the White Chocolate is just well...Chocolate! However, they are optional and don't get used every time. They are my sneaky surprises!!💝​

My Apple Pie🍎
5-6 large apples; 6-8 medium apples; peeled and thinly sliced
1 cup dry oatmeal
1 cup Craisins or Golden Raisins
1/2 cup Butterscotch or White Chocolate Chips, optional
1 Tablespoon Cinnamon
1 teaspoon Ground Ginger
1/2 teaspoon Allspice
1/2 teaspoon fresh grated Nutmeg
3/4 cup (packed) light brown sugar
Dash of Salt
Pillsbury Pie Crusts
•Preheat oven to 375 degrees.
•Let pie crusts come to room temp.
•Lay bottom layer of crust into pie pan. The edges will be too big for the pan and that's ok!
•Mix all the pie ingredients together and toss thoroughly making sure everything is coated well. Taste an apple. Adjust spices if you want more punch to the flavor.
•Pour all of the ingreds. into the crust/pie pan. It will be very full and piled high. Be gentle! You don't want to tear the bottom of the crust.
•Unroll the top crust and lay it over the pie. Take the edges and tuck them under the bottom layer to fit into pie pan. Crimp the edges with your fingers(photo) or using a fork to gently seal the edges.
•Use a cookie cutter(photo) or sharp knife to make tiny slits to allow steam to escape while cooking.
• Sprinkle a tiny amount of white table sugar on top!
•Bake at 375*degrees for 30-35 minutes until crust is beautiful brown and you can hear the bubbly goodness inside!!
•Remove and let cool until it's warm.
•Serve with a whipped topping, ice cream, or by itself with a good cup of coffee!☕️​
